What is document parsing?

Reading a document and extracting structured information from it: line items, dates, quantities, amounts, reference numbers. This is the workhorse behind most manufacturing and back-office automation, because so much still arrives as a PDF or a spreadsheet built to somebody else's shape. The design question is never whether it is perfect but where the confidence threshold sits, and what happens to everything below it.
